Gluten-Free and Vegan baking at the Hub

We've been working hard trying to keep up with the summer rush and at the same time, we're trying to expand and experiment with our food.
We've also hired a couple of people (welcome Fiona and Laura). Fiona is fresh out of cooking school and is focusing on making and experimenting with baked goods that are both vegan and gluten-free.
Here are some of the things we've been working on:

Gluten Free Sweet Scone filled with blueberry and cream cheese filling.
Our Signature Buckwheat Chocolate Chip Gluten Free Cookies (with Pecans)
Vegan Fudge Cake (made with chic peas)
Nutty Vegan Breakfast Bar (full of everything)

Patio Permits Approved!

After a long day at city council, just before the Easter weekend was to begin Lisah and I were wondering if our appeals would ever be heard. On the table before us was the displacement of 10 hot dog street vendors from the Bloor Street strip just west of Yonge St. These poor, hardworking people had their permits on hold for 3 years, and their business basically abolished. Expecting to come back after the construction was finished on 'The Miracle Mile' they were told there was no spots for the vendors to come back. Lisah and I were almost in tears listening to the stories of the hardships they had endured. These are some of the hardest working people in the city.
The delicate issue took up most of the day. Finally, around 4pm, they heard our appeal and unanimously approved our permits. We were overjoyed. Although we can't appeal the lack of good weather we can finally begin to plan and get ready to construct our patio. As soon as we receive the official papers, we'll begin our construction.
For your information our patio will only operate during regular business hours, there will be no outdoor music, and there will be no alcohol served. We love our community and all the support we've received. The city council was very impressed. We love everyone.

Hub's quest for patio permits from the city of Toronto

We're currently in the process of trying to get our front and side patio permits approved by the city. We couldn't be more happy with the insane amount of support we've received. We love everyone.

Thank you to everyone who wrote us e-mails and letters, thank-you to all the local neighborhood associations who have supported us, and thanks to Mike Layton and Angela and all the others at his office for their continued support and help.

We'll be going to city council on the 21st of April to state our case and hopefully get the entire thing finished off so we can start construction.

We plan on having a 'natural border' for all of our fencing of the areas of the patio. This will allow us to have a unique feel to our outdoor space, where we'll also have a garden for fresh herbs.

Fingers are crossed.

Lisah has been working hard on preparing our Special Events and Catering Menu with some amazing results. We do catering for events at other locations, or you can rent our space and have it catered. We can also obtain LCBO licenses for your event. The food has been getting rave reviews, and is from our local suppliers. All of the meats are nitrate-free/drug free and raised naturally. All of our cheese is from a Mennonite supplier just outside of Kitchener, and all of our breads are organic! Check out some of the beautiful things she's done so far.

Lost Blogs and Gluten Free Buckwheat Chocolate Chip Cookies with Flax Seed

Well we're back after a bit of a layoff getting the cafe and its operations in order. We've been perfecting our menu and experimenting with new recipies. Here's some of the things we have to offer:

Breakfast Scones: Made with organic flours, free-range natural eggs, nitrate/hormone free bacon and extra old natural cheddar (sharp in flavour)

Breakfast on a Bun (B.O.B.): Made with free-range eggs from chickens fed with all natural feed (Mennonite) with the nitrate/drug free bacon, and natural extra old sharp cheddar cheese on a soft ciabatta bun.

Gluten Free Buckwheat Chocolate Chip Cookies: Made with gluten-free flour and flax seeds. Chewy and delicious.

Also making hearty soups prepared in-house fresh everyday using local and healthy/organic ingredients first whenever possible. Add a sandwich to any soup for a full meal.

Also making a very popular vegetarian chili!
